I love the comforting warmth of baked oats when it’s chilly, but when it’s hot, I turn to overnight oats. They’re a nice, cool, quick, and yummy breakfast that stays with you. They’re called overnight oats, but the oats and chia seeds are pretty well hydrated in about 15 minutes.

INGREDIENTS
1 ½ cup rolled oats
1 ½ cup low fat milk (or almond milk)
½ cup plain low fat greek yogurt
½ cup unsweetened apple sauce
1/2 banana
½ teaspoon vanilla
2 teaspoon chia seeds
⅛ teaspoon salt
1 cup strawberries
INSTRUCTIONS
1) In a large mixing bowl, mash banana
2) Add strawberries, low fat milk (or almond milk), yogurt, vanilla, rolled oats, chia seeds and salt.
3) Mix well.
4) Pour the mixture into a container with a cover, or individual containers. Cover and refrigerate for at least 15 minutes. Keeps for several days.
Notes: You can make this with cottage cheese instead of yogurt, but I don’t like it as much. The yogurt version is smoother and creamier.
