This meatloaf is just like your mom made with a few tweaks: Replace the greasy ground beef with ground turkey. Replace dry crackers or bread with cooked quinoa or rice so it’s moist. Cook in a baking pan instead of a bread pan so it browns on the sides and doesn’t sit in grease. Replace ketchup with a fresh tomato and garbanzo bean sauce. All kidding aside, this meatloaf is delicious and seriously nutritious: 450 cal, 31 g protein, 3 g saturated fat, 42 g carb, 10 g fiber, with lots of b vitamins and minerals.
INGREDIENTS
• 1 pound ground turkey (substitute any ground meat)
• 1 medium onion
• 1 cup cooked quinoa (cracker/bread crumbs, or cooked brown rice)
• 1 tsp ground cumin
• 1 tsp ground coriander
• 2 tsp dried oregano
• 2 tsp dijon mustard
• 1 large egg
• 1 tsp dried rosemary (or 1 sprig fresh)
• 1 tablespoon olive oil
• salt and pepper
SAUCE
• 1 clove garlic
• ½ tsp smoked paprika
• 1) 15 oz can garbanzo beans
• 1) 14 oz can diced tomatoes low sodium
• 1 tbsp Worcestershire sauce
• 1 tbsp balsamic vinegar
• 1 tbsp olive oil
• salt and pepper
INSTRUCTIONS (Meatloaf)
1. Pre-heat oven to 450F
2. Cook ⅓ cup quinoa or rice (if using) or crush 1 cup crackers/bread crumbs
3. Chop onion (½ if you aren’t going to make the sauce) Sauté ½ medium onion, with ground cumin, dried oregano, and ground coriander in olive oil over medium heat and allow to cool. Season with salt and pepper.
4. Add cooked quinoa (rice or cracker/breadcrumbs), egg, dijon mustard, ground turkey and about ¼ teaspoon salt and pepper. Mix with your hands.
5. Shape into a football shape in dutch oven (or baking pan) and coat lightly with olive oil.
6. Reduce oven heat to 400F, bake for 30 minutes.
INSTRUCTIONS (Sauce)
1. Chop garlic. Sauté ½ medium onion and garlic in olive oil over medium heat until fragrant.
2. Drain and rinse garbanzo beans, add them with diced tomatoes, Worcestershire sauce, smoked paprika, and balsamic vinegar.
3. Bring to a boil then simmer for 10 minutes stirring occasionally. Season with salt and pepper to taste.
4. Remove the meatloaf from the oven when it has cooked for 30 minutes, and the sauce has cooked. Pour the fat off the loaf. Pour the sauce around the loaf. Sprinkle with rosemary, then drizzle w/ olive oil.
5. Put it back in the oven and cook for about 10 more minutes.
